Day seven, and my second favourite day of the week, because I really like the soup, but more importantly because it’s the LAST DAY! Day seven parameters are as follows:
Miracle Soup! Miracle soup recipe: 2-3 large onions chopped, 1 head of cabbage chopped, 1 green pepper chopped, 5-6 celery stalks chopped, 2 large cans of diced tomatoes, and 2 packages of Lipton beefy onion soup mix. Put the chopped vegetables in a pan and pour the tomatoes (that have been slightly blended in a blender) over top. Add 4-6 cups of water, enough to barely cover the vegetables. Cook for 10 minutes. Add the beefy onion soup mix and cook until all the vegetables are tender. Once the soup is ready, you are free and clear to enjoy as much of it as you like.

I actually REALLY like this soup! I’m not one that likes chunks of vegetables in soup, so I pretty much put everything through a food processor and made a cabbage bisque. For the most part, it ends up taking like the homemade salsa that I make! I had three bowls of soup through the day, one for each meal. My family had some too, but for them I made garlic bread to go with it, which I didn’t have any of. (Sometimes it’s a blessing not having a sense of smell!) The fact that we had snow on Sunday just made soup day all the better; it FELT like it should be a soup day! By the end of the day, I ended up going to bed early, because I started feeling hungry again and I didn’t want to eat any more soup.

SOUP SMELLS AMAZING! I’m quickly tiring of black coffee – I really miss the cream and sugar…. which is apparently what I like about a “coffee”. Go figure. I had soup for lunch but was out for the better part of the day and came home to no soup. Teenagers also like the soup it seems! I had to partake in sport in the evening so perhaps it’s better I didn’t eat a bunch beforehand. I increased my water intake to ensure I didn’t get Hangry. I’ve also been plotting all the crap food I’m going to enjoy this coming week. Tacos are on the top of my list – and hubby was diligent in finding the place to get them!
