Is it just me, or is this the slowest week in history? Yesterday was day three! Day three parameters were as follows:
Fruit and Vegetable Day – Same as day one and day two, except no potato today
So how did day three go for our two brave souls?
I still had some leftover stir fry that I had made yesterday for vegetable day, so I had carrots, bean sprouts, green beans, broccoli, cauliflower, baby corn, red peppers, and mushrooms for my lunch. For breakfast, I had honeydew and cantaloupe, and through the day I had an apple, clementine, grapes and cut up carrots. Drinks were black coffee and water (and for the record, drinks aren’t challenging at all because this is what I usually drink!) For supper, I had mashed turnip, green beans and I pushed the envelope a bit, and used some Worcestershire sauce and Mrs. Dash to sauté some mushrooms to go with it. Not gonna lie, last night was REALLY tough for me, in part because I knew that today was day 4… and my least favourite day of the seven days. So, I was feeling very defeated, and very much wanting to throw in the towel… until this morning when I got ready for work, and when I put my jacket on, I could feel it was a little looser around my hips. It also helped that this morning I was pulling chicken breast out of the freezer, to make in my instant pot tonight for day 5 tomorrow. So… I’m cautiously optimistic that I can stay the course!
The second participant had mashed turnip, carrots, cauliflower, broccoli, apples, clementines, watermelon, blueberries, grapes, and pineapple. Like me, she found fruit and vegetable day a much better mix… it felt like more normal eating, with the exception that both of us were pretty much dying for some protein! Both of us planned suppers that we’d typically not want to eat, but both of us found we really wanted to eat them. (She described it as when Bella first wakes up as a vampire in the Twilight movies… very accurate!) For drinks, she had a café mocha and water… but we both made it through the day! She has also noticed a difference in how her clothes are fitting… which is a great motivator, because have I mentioned before that this is NOT easy?
