Another day, another day closer to the end! Day two is here and gone. Day two parameters were as follows:
Vegetable Day – Eat lots of vegetables – fresh, raw, or cooked. Stay away from starchy vegetables such as peas, corn and beans. SURPRISE! You also get a baked potato with butter today.
Day two and both of us survived the day with no slip-ups!
I had carrots, bean sprouts, green beans, broccoli, cauliflower, baby corn, red peppers, and mushrooms. For drinks, it was black coffee and water (same as yesterday… I should have mentioned that!) I ended up making a stir fry with the mixed veggies and putting it on top of bean sprouts which was great… but I couldn’t help thinking that it would taste A LOT better on top of rice! I was really happy to be able to eat a hot meal, but it did feel a little weird having green beans for breakfast. I literally looked forward to supper ALL day, knowing there was a baked potato waiting for me at the end. I resisted the urge to stop at the store to find the largest potato I could find, like this potato: http://news.bbc.co.uk/local/nottingham/hi/people_and_places/nature/newsid_8981000/8981742.stm
If I’m honest, I found day 2 harder than day 1. On day 1, if I got hungry I had no problem grabbing some fruit to eat, but on day 2 I hit a point where even if I was hungry, I would think “I’m hungry… but I just can’t eat another vegetable… I just can’t.” But, I made it through the day!
The second participant had baby carrots, celery, broccoli and cauliflower, and black coffee and water to drink. She also had mashed turnip (which I didn’t think of yesterday, but I LOVE that I totally should have made some of that) and her baked potato for supper as well. She had made mashed potatoes as a side for her family for supper, so she mashed her baked potato up so she felt more like she was eating what everyone else was. (I did something similar… last night’s sides were green beans and baked potato with pork chops… so I almost was able to eat what everyone else did). Like me, she found that she would just reach a point where she couldn’t eat another vegetable. Because of this, both of us went to bed annoyed and hungry.
