Day 2 Parameters: Vegetable Day – Eat lots of vegetables – fresh, raw or cooked. Stay away from starchy vegetables such as peas, corn and beans. SURPRISE! You also get a baked potato with butter today.
Yesterday was Day 2 of the seven day “New Year New You” cleanse… and I got through the day with no issues! I found this day easier than Day 1 in some respects. It was easier because I was able to eat hot meals, and then on the flip side it was a little harder because it was the second day of me limiting what I was eating.
For drinks, I had my one cup of black coffee in the morning and then herbal tea and water the rest of the day.
For food, when I first woke up, I was really hungry. Not surprisingly, all fruit doesn’t have “staying power” when it comes to keeping you full! However, after I had my morning coffee and a tea, I didn’t feel hungry anymore, so I waited to eat until I did. Around 10ish I had a sliced cucumber, and then for lunch I had roasted peppers and onions over cauliflower rice, topped with pureed jalapenos. It might sound a little sketchy, but it was SO GOOD! It would have been perfect if there was some chicken in it. For snacks I munched on raw carrots, and for supper I had my baked potato with butter, along with mashed turnip and carrot. I’m not gonna lie, I sought out the biggest potato I could find in the bag! However, I buy my potatoes at Dave’s Fruit and Vegetable Stand, so they are normal sized potatoes… not Costco’s potatoes that are the size of a chihuahua, so I didn’t feel like I was bending any rules!
There’s another unexpected side effect to this new year new you cleanse… because what I’m eating isn’t very dense, I know that it’s only a matter of time before I start feeling hungry, so I find I try to go to bed a little earlier so I’m asleep by the time the hunger pangs hit again. I got over 8 hours of sleep last night, which is UNHEARD of on a work night!
