"New Year New You": Day 7

Day 7 Parameters: Miracle Soup! Miracle Soup Recipe: 2-3 large onions chopped, 1 head of cabbage chopped, 1 green pepper chopped, 5-6 stalks of celery chopped, 2 large cans of diced tomatoes, and 2 packages of Lipton Beefy Onion Soup Mix. Put the chopped vegetables in a pot and pour the tomatoes (that have been blended slightly) over top. Add 4-6 cups of water, enough to barely cover the vegetables. Cook for 10 minutes. Add the Beefy Onion soup mix and cook until all the vegetables are tender.

Day 7!! Day 7!! **** yea!

Yesterday was Day 7, and the happiest I’ve been in a while! Because this is now the 5th year that I’ve done this eating challenge, and made miracle soup, I’ve learned a few tricks along the way. First off, I’m not a big fan of trying to eat cabbage soup when the veggies are all chunks. I don’t like cabbage or celery, and I don’t like them even more by the end of the day. However, a couple years ago I discovered that if I blend everything, it’s more a smooth creamy type of consistency and I like it far more. With all the peppers and onions in it, it really feels like I’m just having my homemade salsa. The only other substitution I made to the original miracle soup recipe is that I replaced the soup mix with jalapenos this year. The soup mix has some noodles in it, and by the end of the day they get super mushy and it makes it hard to eat them.

Beverages for the day were the same… one coffee, and then herbal tea and water. Super easy to stick to because it’s just habit for me now.

I mixed up the soup the night before, so I could just throw it on the instant pot in the morning to cook. I had soup throughout the day… Just soup… nothing but soup. It’s funny, I always start the day super positive and motivated and happy that it’s day 7, and after a full day of eating just soup I feel pretty BLAH by the end of the day, and just want to go to bed early so that the whole thing is over.

For supper, yep you guessed it more soup. I thought I’d share the love so my family had soup for supper as well… but they also got to have garlic bread. That was the biggest test for me today… not to cave and have some garlic bread with my soup. But… I DID NOT CAVE.

I can now officially say that I have successfully completed the “New Year New You” eating challenge for all seven days, and I didn’t cheat once. That’s a huge feeling of accomplishment, because as anyone who has tried it can tell you, it is NOT easy!

When I weighed in this morning, I found that I lost a total of 8.7 pounds. My plan is to weigh in one week from today and see what my number is then as well. I think a week later will give me a much better gauge of how this challenge affected my weight. I definitely feel that my food cravings are much better under control. More than anything, I’m glad that it’s over.

I’m not sure what I’m having for breakfast yet today… but I can guarantee whatever it is, it will involve toast!
