Day Two of the "New Year New You" cleanse was vegetables. Instructions were "Eat lots of vegetables – fresh, raw, or cooked. Stay away from starchy vegetables such as peas, corn and beans. SURPRISE! You also get a baked potato with butter today. I'm happy to report that both of us stayed the course and stayed on track for Day Two as well! My co-worker said she had carrots and celery that she nibbled on all day, lunch she had a couple of tomatoes diced with salt and pepper, and for supper she made an all veggie stir fry with a splash of soy sauce that looked awesome! For myself, I took full advantage of the fact that I could eat HOT food and had steamed carrots for breakfast, roasted veggies (carrots, cauliflower and onions) with Mrs. Dash and steamed broccoli for lunch, and for supper took full advantage of having my baked potato with butter (best potato I've EVER eaten I think) and cooked mushrooms with a splash of soy sauce. For snacks I munched on raw carrots. Personally I found vegetable day way easier than fruit day. There are just so many things you can make with vegetables... a good low-fat stir fry being a perfect example of this! Being able to eat hot meals made me feel more satisfied than eating fruit all day as well. I wasn't tempted to cheat at all this day, and found myself thinking of ways I could incorporate more healthy eating into my regular diet once this week was finished. I will definitely be making more roast vegetables and stir fry!
