You can read what Day 2 is about here Day 2 Parameters: Vegetable Day – Eat lots of vegetables – fresh, raw, or cooked. Stay away from starchy vegetables such as peas, corn and beans. SURPRISE! You also get a baked potato with butter today.

Day 2 reflections:  I’m not much of a fruit eater, except with smoothies, but I do like my veggies, so I found Day 2 a little easier than Day 1. My veggies of choice were lettuce, spinach, green pepper, onion, jalapeno, banana peppers, carrots, black olives, cauliflower, broccoli, cucumber, and of course my serving of potato. The thing that I liked about this was that veggies can be heated up, and while I really missed having a hot meal yesterday I was able to have a hot meal today. (Although, if I’m being honest,  I may have almost given up my right arm for a plate of the pasta I made everyone else for supper, instead of the tossed salad that was sitting in front of me).

The easiest part of this challenge for me: Vegetables are something that is more in line with how I’d eat normally, so it didn’t feel as much that I was doing something out of the norm.

Hardest part of this challenge for me: Again, was night time… really wanted to eat more at night, got cranky about it and played Candy Crush instead! *
