Day Seven finally arrived, and speaking for myself I could not have been happier!
Day seven guidelines were as follows:
Miracle Soup! Miracle Soup Recipe: 2-3 Large Onions Chopped, 1 head of Cabbage chopped, 1 green pepper chopped, 5-6 celery stalks chopped, 2 large cans of diced tomatoes, and 2 packages of Lipton Beefy Onion Soup Mix.
Put the chopped vegetables in a pan and pour the tomatoes (that have been slightly blended in a blender) over top. Add 4-6 cups of water, enough to barely cover the vegetables. Cook for 10 minutes. Add the Beefy Onion Soup Mix and cook until all the vegetables are tender.
My co-worker had errands to run on Day Seven, and obviously when you're on the move, toting soup with you isn't the easiest way to go!
For breakfast she had a banana and yogurt, and then dined on miracle soup for the rest of the day. I stayed the seven day course and ate miracle soup all. day. long. Honestly I didn't mind it too much, but having soup for breakfast is kind of... blah. I didn't particularly enjoy that part, but the rest of the day was fine. While I was eating soup through the day, I was thinking of different ways I could modify it, so it still packed a healthy punch, but could maybe become a staple meal in our house... because it really tasted pretty good! I'm noticing my change in appetite more and more, in addition to what I'm no longer seeming to be hungry for. Once this is completely finished I'm going to do my best to stay at the lower food portions, because I feel this week has given me a great jump start when it comes to staying healthy!
